Spinach Rice Casserole

Ingredients
  • 1 chopped onion
  • ½ cup butter
  • 4-6 ounces Velvetta cheese
  • 1 can Cream of Mushroom soup
  • 2 10-ounce packages frozen spinach, cooked per directions.
  • 2 cups cooked rice
Instructions
  1. Saute onion in butter (can do in microwave), until onion is translucent.
  2. Add Velvetta cheese and Cream of Mushroom soup.
  3. Heat until Velvetta cheese is melted.
  4. Add spinach and rice.
  5. Mix well.
  6. Heat thoroughly.
