Breakfast Before Casserole
  • 1 pound sausage, browned
  • 6 eggs, slightly beaten
  • 2 cups milk
  • 1 teaspoon salt
  • 1 teaspoon dry mustard
  • 3 slices bread, cubed
  • 1 cup grated cheese
  • chopped green chile, optional
  • sliced mushrooms, optional
  1. Brown the sausage and drain.
  2. In a medium bowl beat the eggs.
  3. Add the milk, salt and dry mustard to the eggs, and beat again.
  4. Layer the bread, sausage, green chile and mushrooms in a 9x13-inch baking dish.
  5. Top with grated cheese.
  6. Stir the egg mixture again and pour over the top of the layers.
  7. Cover and refrigerate overnight.
  8. In the morning, remove the baking dish from the refrigerator and preheat the oven to 350F.
  9. Bake for 40-45 minutes until golden brown.
  10. Allow to cool for 5-10 minutes before serving.
This dish is best if prepared the night before and baked in the morning.
