Jay Holland's Favorite Oatmeal Cake

Ingredients
Cake
  • 1 cup old-fashioned oats
  • 1½ cups boiling water
  • 1 cup brown sugar
  • 1 cup white sugar
  • ½ cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla
  • 1½ cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg (optional)
  • ¼ teaspoon cloves (optional)
  • 1 teaspoon soda
  • ½ teaspoon salt
Topping
  • ½ cup butter
  • 1 cup brown sugar
  • ¼ cup milk
  • ½+ cup chopped nuts, optional
  • ½+ cup coconut, optional
Instructions
  1. Preheat oven to 350° F.
  2. Grease and flour a 9 by-13-inch baking pan.
  3. Stir oats into boiling water. Mix and let stand 15 minutes.
  4. In a large mixing bowl, cream the sugars and butter together.
  5. Add the eggs; mix well.
  6. Add the oatmeal mixture and vanilla.
  7. Mix together the flour, cinnamon, soda and salt.
  8. Stir into the oatmeal mixture, mix well.
  9. Bake for 30-35 minutes.
While the cake is baking, make the topping.
  1. In a medium saucepan melt the following: ½ cup butter, 1 cup brown sugar and ¼ cup milk.
  2. Bring to a boil stirring frequently. Boil for a few minutes, then reduce the heat and let simmer until the cake is done baking.
  3. If desired, add ½+ cup chopped nuts and/or ½+ cup coconut.
  4. Spread on cake after it has cooled a few minutes. The topping will soak into the cake!
