Oatmeal Cookies
This was on the old fashioned Quaker "100% Grain" Oats box's lids with a little of my variation. REMEMBER If you're going to spend the time cooking you should use real butter. Always share the cookies so you don't eat too many. You can diet all the other days and the rest of the recipe is really good for you.
  • ½ pound real butter
  • 1 cup firmly packed dark brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 teaspoon real vanilla
  • 1½ cups unbleached flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 3 cups of Quaker Old Fashioned Oats (uncooked)
  • 1 cup of raisins
  • 1 cup of Craisins
  • 1 cup of chopped pecans
  1. Beat (I hand stir/whip with fork) softened butter with sugars. Add eggs and vanilla; beat (I hand stir). Mix together flour, baking soda, cinnamon and salt. Stir flour mixture into egg mixture. Add other ingredients, mix well.
  2. Drop by rounded teaspoons onto ungreased cookie sheet.
  3. Bake 11 minutes in a 350 degree oven. Let cookies cool in pan on wooden board for 1 minute. Remove cookies to wire rack.
  4. About four dozen cookies.
