Grilled Chicken & Bow-Tie Pasta Salad

Ingredients
  • 8 ounces uncooked bow tie pasta
  • ⅓ cup orange juice
  • ¼ cup lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon stone-groud mustard
  • 2 teaspoons sugar
  • 1¼ teaspoons salt
  • ½ teaspoon freshly ground black pepper
  • 1½ teaspoons rice vinegar
  • 2 chicken breasts, grilled and chopped
  • 1½ cups seedless red or black grapes, halved
  • 1 cup celery, diagonally thinly sliced
  • ⅓ cup finely chopped red onion
  • ⅓ cup slivered almonds, toasted
  • 3 tablespoons chopped fresh chives
  • 2 tablespoons chopped fresh parsley
Instructions
  1. Cook pasta according to package directions, omitting salt and fat; drain.
  2. Meanwhile combine orange juice, lemon juice, olive oil, mustard, sugar, salt, black pepper, and rice vinegar in a large bowl, stirring with a whisk to combine.
  3. Add pasta, chicken, grapes, celery, red onion, almonds, chives and parsley; toss gently to combine.
